Where are application colors defined?

I have two projects, one created about a year ago with VS2015 an older version of Xamarin (2.0.0.6482) and one created yesterday in VS2017 and Xamarin (3.0.0.561731). I've since updated the old application from PCL to .NET Standard. The old application has a black background with white font while the new application has a white background with a black/gray font. I have searched every .xaml file and .cs file in the shared code and cannot figure out where the color is coming from. I can see that the Resouce.Designer.cs file in my .Droid project is getting updated with the colors but this file is automatically generated from something, I just can't figure out what. Any clues?

EDIT: Further research lead me to the "Application theme:" setting in the Android Manifest. For both projects these fields are blank. When I set the "Application theme:" to "@style/android:Theme.Holo.Light" for the older project that has a black background this causes it to have a light (whitish) background. But this still doesn't explain the differences between the two solutions.
